Jeff Volek is a Professor in the Department of Human Sciences at The Ohio State University. He is a Registered Dietitian with a PhD in Kinesiology and has published over 300 peer-reviewed scientific manuscripts and five books.
His research focuses on how humans adapt to carbohydrate-restricted diets, particularly for athletic performance and metabolic health. His work has been instrumental in demonstrating that fat-adapted athletes can perform at high levels without carbohydrate dependence.
Along with Stephen Phinney, he co-authored "The Art and Science of Low Carbohydrate Living" and "The Art and Science of Low Carbohydrate Performance," which are considered foundational texts in the low-carb/keto community.
